Working with meat farmed within the Community, the boys of the butchers learn all the secrets of charcuterie. The meat is processed on site and the production includes hams, started and seasoned in Parma, pancetta, flakes, loins, shoulders and thighs. Aimed at a high-level, training includes experimental projects, with a constant desire to innovate and improve.
